The purple veg box contains 8 packets of vegetable seeds which produce purple vegetables full of health giving anthocyanin. The seeds included are, Purple Prince French bean, Lavender Parching corn, Purple podded pea, Beetroot LaurAnne, Burgundy Amaranth, Ragged Jack Kale, and Purple Thrills mustard and Cerise Lettuce.
Why Purple Vegetables?
Well for a start they look cool, but the amazing thing about them is that the colour is caused by the presence of anthocyanins, which are plant compounds associated with a myriad of health benefits. They have a role in improving night vision, the reduction of cancer cell proliferation, improving memory, cardiovascular disease protection, healthy aging and have been shown to aid in the prevention of diabetes and obesity (in mice), on a high fat diet. Anthocyanins are notoriously difficult to study as there are lots of them, and they are easily broken down or transformed into other things as soon as you start to interfere with them. The purple colour in beets comes from betalain compounds, which are also powerful antioxidants, anti-inflammatory, anti-fungal, and really good for you.
