Burdock

 Burdock (Arctium lappa)


Burdock is a biennial plant known for its large leaves and distinctive burrs. It grows up to 6 feet tall and produces purple flowers in its second year. Both the roots and young leaves are edible and are used in various culinary dishes, especially in Asian cuisine. Burdock is also valued for its medicinal properties.

Sowing Indoors: Start seeds 8-10 weeks before the last frost or sow directly outdoors in early spring.
 
Location: Prefers full sun but can tolerate partial shade.

Soil: Thrives in well-drained, fertile soil with a neutral to slightly alkaline pH.

Watering: Keep soil consistently moist but avoid waterlogging.

Growth: In the first year, it forms a rosette of leaves. In the second year, it bolts and flowers.

Care: Thin seedlings to allow adequate spacing (12-18 inches apart). Harvest roots in the fall of the first year or in spring of the second year.

Burdock is a robust plant that can add both culinary and medicinal benefits to your garden while also attracting pollinators.
