Cucurbita Maxima
Also known as Mexican Banana and Plymouth Rock, this is a pinkish-orange American heritage winter squash variety. Elongated in shape with firm, sweet yellow-orange flesh. It can trail for nearly 3 metres, producing an abundance of fruit. It stores well over the winter.

Open-pollinated chemical-free seeds. Grown and saved in Wexford, Ireland.
How to sow:To ensure the best germination, the temperature must be at least 20C. Sow the seed point-side down 1.5 cm deep in small pots in peat-free compost. Plant outdoors 90 cm apart from late May to avoid frosts.
Sow indoors: April to early June
Plant outdoors: Late May to July

How to cook:This squash is ideal for baking due to its excellent, sweet taste and firm, floury texture. It can also be used in soups and stews or roasted as a savoury vegetable.
We love making an old-fashioned pumpkin pie using Highbank Orchard organic apple syrup (made in Kilkenny) instead of maple syrup.
